The cooking surface (inner surface) is made from 18/8 food-grade (AISI 304) stainless steel which is extremely hygienic, most durable, does not react with most foods and does not pit or corrode. The heavy gauge aluminium core spreads heat well for even cooking with no hot spots, and retains heat for quick cooking. It is sandwiched between two layers of stainless steel and does not come in contact with food on the cooking surface. The base (outer surface) is made of AISI 430 grade magnetic stainless steel. Hence this cookware can be used on all domestic gas, induction, electric, ceramic and halogen cooktops.
